When you’re baking do you aim for the higher suggested time? Put those cookies back in for a few more minutes because they’re a bit soft in the center? What works for me is to stick with a usual 8 minutes at 350 for chocolate chip cookies and let them cook on a rack. They retain enough heat to finish baking so they are ‘done’ yet take longer to dry out and are usually much softer.
